Kitchen_全麥無油芒果小麵包

因為吃太甜的水果會口渴,芒果是我不會買的水果之一,但在盛產時,多少會有些免費芒果,芒果香氣水份甜度很高,含水份約83.46%,糖約13.66%,用來做麵包,外加的糖及水量須調整。

全麥無油芒果小麵包

材料:

  1. 高筋麵粉 250g + 全麥粒粉 250g
  2. 芒果肉打汁(去皮核後打汁) 350g,不外加糖、水
  3. 快速乾酵母粉 1.5t, 鹽 0.5t(減量)
  4. 芒果乾(切小丁) 60g

P.S. :


作法:
* 350g芒果肉打汁,加麵粉、酵母、鹽,和成麵團,基本發酵到兩倍大體積(圖4)。
